Always a pleasure to speak to large audiences and even better when there’s so many insightful questions afterwards- of which there were many! I had such a great time that I didn’t manage to take many photos, but here’s the lovely gift I received to mark the occasion.

The Science of Baking: It’s in Our DNA with Dr Syabria Yusoff A Bake Off double act with me and Syabira Yusoff (GBBO 2022 winner), delving into the discovery, structure and importance of DNA…….but through the medium of cake! We had so much fun delivering this webinar in the Science Kitchen University of Leicester. We celebrated International Day of Women and Girls in Science, showcased the science behind a strawberry and cream Genoese cake, and also extracted DNA from a strawberry. Plus lots of Bake Off chat and hearing about Syabira’s research. And a special message from Dame Dr Maggie Aderin-Pocock at the start of the webinar.

This was such a fantastic collaboration of the University of Leicester Science Kitchen working with the University of Nottingham Nanoscale and Microscale Research Centre (nmRC). Looking to inspire and educate the next generation of scientists!

Chocolate Yule Log
The Christmas Classic we cannot be without, the Yule Log! My version uses raspberry jam and ganache as the filling instead of whipped cream, which perfectly compliment and allow you to make the Yule Log ahead of time and not have it take up precious room in the fridge. A beautifully light chocolate sponge, silky smooth ganache and finished off with tempered chocolate decoration.

Festive Pavlova Wreath
Meringue, cream and fruit is a simply unbeatable combination. As an avid grower of my own fruit at home, pavlova is a regular summer dessert in my household but also brings a light and refreshing finish after rich dinners over Christmas. With a crisp out shell and marshmallow-like centre, it's hard to resist! Feel free to adapt to your own choice of fruit for decoration, but the rosemary sprigs definitely bring a festive flourish. Great served with a raspberry coulis!
